cod cakes on our Nantucket summer vacation was such a blast! Spending time in the kitchen with family over a bottle of wine and some delicious local seafood, corn on the cob, and tomatoes is one of my favorite Nantucket summer vacation activities.

These are so easy to prepare too! Your dinner guests will love these whether you’re on Nantucket or not. Make them early in the day, and it will be so easy to fry them right before dinner. Pour yourself some wine and impress your dinner guests by frying these up while everybody watches. Double the recipe for a crowd. This recipe serves about 4 people.

Cod Cakes

1 lb cod, boiled for five minutes, cooled, and flaked into a bowl
1 large red potato, boiled until soft and chopped
1 bunch of scallions, chopped
1 bell pepper, chopped
1 egg, beaten
Salt & pepper, to taste
Panko
Corn oil
Butter

Combine first 7 ingredients in a bowl. Fill a second bowl with panko. Turn faucet on, rinse hands, and form a small softball of a cod cake, roll it through panko to coat, and lay it on a platter. Rinse hands and repeat. Wet hands help make the cod cake stick together. These can be made hours in advance and stored in the refrigerator. I love serving them to big groups because all the messy work gets done ahead of time, and all you need to do before dinner is fry them to golden perfection. It’s fun to allow your dinner guests to watch you fry the cod cakes. When it’s time to fry them, pour the corn oil and about a half a stick of butter into a large pan. Heat oil until smoking, then lower heat to medium-low and fry cod cakes, for about 5-6 minutes total. When they look crispy and golden, they are finished. Dry on a platter lined with paper towels and serve. These are terrific to serve on a Nantucket summer vacation. Bon appetite!
